Everyday Sushi: Bumble Bee SuperFresh® Seared Ahi Tuna and Veggie Quinoa Stir Fry

I’ve been trying to be more creative at mealtimes so that my healthy diet can include more types of protein, not just the same old chicken all time! I’ve branched out. It helps that my husband loves seafood of any kind! His favorite meal in all of food-land is sushi.

Bear with me. I know ahi tuna isn’t exactly sushi, but it’s what Stewart always orders when we go to sushi restaurants. We don’t do this often, but when we do, I enjoy the tempura, California rolls, and fried rice. And now I finally tasted some almost-sushi while preparing for this story and I found it delicious!

Bumble Bee SuperFresh® Seared Ahi Tuna allows me to make a special sushi-like meal at home that my husband appreciates and I can enjoy too. In recreating part of our dining out experience, I came up with a “fried rice” recipe that is easier on my system than the kind I get in restaurants, and pairs well with the tuna.

Bumble Bee SuperFresh® Ahi Tuna is a delicious treat with a side of soy sauce and wasabi, in a classic Nicoise Salad or served alongside your favorite seafood accompaniments. I served it over a simple salad of baby spinach, sliced red grapes, and sliced almonds with a drizzle of balsamic vinaigrette dressing.

To pair with the tuna, I made this veggie quinoa stir-fry after researching ways to prepare this traditional side dish at home in my paella pan which doubles as a wok.

Tips: with thanks to Damn Delicious and The Kitchn, I learned some very important things that made this veggie quinoa stir-fry extra wonderful. First, start with cold quinoa. I made it the night before so it would chill in the fridge. Second, try to cut all the ingredients to the same general size, that way they will cook more uniformly. This recipe made a delicious side for the tuna and lots of leftovers!

Veggie Quinoa Stir-Fry

Ingredients
4 cups cooked quinoa
canola oil
2 cloves garlic, minced
1 small onion, diced
4 large white mushrooms, chopped small
1 cup broccoli, chopped into small florets
3/4 cup carrots, diced
1 cup frozen corn, thawed
1/2 cup frozen peas, thawed
1/2 cup scallions, sliced
Salt and pepper
2-3 tbsp soy sauce
1 egg, beaten

Instructions
Heat the wok or stir-fry pan so that a droplet of water sizzles
Heat 1 tbsp of the oil for about 20 seconds
Add the onion and garlic and cook for about 4-5 minutes, stirring often
Add the mushrooms, broccoli, and carrots and cook until tender, 3-4 minutes
Add the peas and corn and cook for 2 minutes
Add another tbsp of oil and stir into vegetables
Add the quinoa and scallions and fold to combine
Season with salt and pepper
Add soy sauce by pouring around the edges of the pan and stirring in
Make a space on the pan for the egg and pour in the beaten egg. Mix into the stir-fry until all the egg is cooked.
Serve hot!

    Hey Kim, usually I make my stir fry from white rice so this recipe is definitely an interesting mix to my cooking routine. Usually it is done with improvisation alone the way, planning ahead would sure be more helpful 🙂
