I didn’t make any more resolutions for 2007. So here I am, despite my fatigue and my aching back (although it is easier because of the fabulous new office chair my parents got us for Christmas), making sure I try to fulfill the one promise I did make to myself for the year: posting every day.
I can’t believe it’s 2007. This morning I told Kyle that in 2007 he will turn 2, and he will get a baby brother, almost like a birthday present. (Please, universe, do not let baby brother be born on Kyle’s birthday!) He didn’t get it. But he did act like a complete gentleman today when we had a group of friends over for New Year’s Day chili and homemade mac and cheese. I used a recipe for mac and cheese from Cooking Light but for all of the low fat, nonfat, and skim ingredients I just used the regular kind, which defeats the purpose of getting a recipe from Cooking Light but it tasted much better and it avoided strange things like “tempering” and “picot bread crumbs” that I found on the Food Network’s website.
Anyway. Did I mention fatigue? That’s why I am rambling, and it is also why I am not posting new pictures, because the camera is very far away and I am not about to get back up to get the memory card and retrieve the photos. Maybe this will make you read again tomorrow. Happy New Year everyone!


LOL! I’m SOOOOO glad I’m not the only one who does that – finds a low-fat recipe that looks yummy, only substitues regular ingredients for all the low-fat, because, really, why go to all the effort to cook it unless it will be REALLY yummy and it will be soooo much yummier if it is not low fat!
I would have substituted “real” food for those ingredients too.
Have you ever seen the “Good Eats” where Alton makes home made Mac and Cheese? It’s VERY involved. Not sure it would be worth that kind of effort.
Happy New Year my friend. Thanks for the fun party. And as for recipes- my philosophy is that they are merely guidelines of what you might want ot include to make something that will come out similar to the original recipe. Henceforth, why my cooking never tastes the same twice.
